Ropp Jersey Cheese is proud to be the first in Illinois to feature a Cheese-On-Wheels®: An on-farm dairy processing plant from Darlington Dairy Supply.  Our cheese making process is all done on-farm in a self contained cheese processing facility. The side of the facility has a wall of windows for viewing and educational tour purposes.  This facility and process is USDA and Health Department certified and approved.
